    Any good guacamole recipes?

    I`m addicted to Guacamole and chips this summer! Sitting poolside daily in this heat , with some Millers Chill ,and chips w/guacamole is the way to go!

    I am looking for a hot and spicy recipe!

    found this...I dont really care for Guacamole..but here you go


    3 avocados
    1 large red onion
    4-5 small roma tomatoes (or both!!) or 1/4 cup diced roasted red peppers (or both!!)
    4-5 tomatillos
    1/2 cup chopped chili peppers or jalapeno peppers or serrano peppers, your choice
    3 garlic cloves
    1 teaspoon sea salt
    1/4 teaspoon cayenne pepper
    1/4 teaspoon red pepper flakes
    1/4 cup finely chopped fresh cilantro
    1 lime, juice of

    Pit and dice avocados. you could mash or puree them if you like a creamier guacamole or leave chunky.
    Dice red onion, peppers, garlic, tomatoes and tomatillos. Leave the ribs and seeds in the peppers if you like them to be VERY spicy! Again, chop everything smaller or larger depending on your preference of texture.
    Add cilantro.
    Toss diced veggies with cayenne pepper, red pepper flakes, salt and lime juice.
    Add the mixture to the avocados and toss (or mix if your avocados are pureed) evenly.
    Adjust seasonings to taste, chill one hour to allow flavors to blend.

    Thanks, 1 whole teaspoon of salt? That seems to be alot!

    CAJUN GUACAMOLE

    Ingredients

    2 California avocados, about 1 pound
    1 tablespoon fresh lemon juice
    1/2 cup finely diced red bell pepper
    1/2 cup small cherry tomatoes (cut in halves or quarters, if large)
    1/4 cup thinly sliced green onion
    3 cloves garlic, finely chopped
    1/2 teaspoon chopped, fresh thyme leaves or 1/4 rounded teaspoon dried
    1/2 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    1/8 teaspoon cayenne pepper


    Preparation
    Coarsely mash (DO NOT PUREE) avocados; stir in lemon juice. Fold in remaining ingredients. Guacamole is best made as close to serving as possible. For short-term storage, seal in an airtight container with a piece of plastic wrap against the surface of the guacamole.


    Serves: 6

    Yes, we like Cajun so it works for us I generally add more onion. If you have not tried using an entire green onion, do so. The green part adds a different but good flavor. I even use an entire green onion (or more) in salads..........great in potato salad!~

    I`ll keep that in mind, I love onions, especially green onions raw in soups or salads.
