I made these today to take to work......and brought the pan home empty.
Peanut Butter Bars
1/2 cup Butter or Margarine, softened
1/2 cup Sugar
1/2 cup Packed Brown Sugar
1/2 cup Creamy Peanut Butter
1 Egg, Beaten
1 tsp Vanilla Extract
1 cup All-Purpose Flour
1/2 cup Quick-Cooking Oats
1 tsp Baking Soda
1/4 tsp Salt
1 cup (6 oz) Semisweet or Milk Chocolate Chips
Icing:
1 cup Confectioners Sugar
1/4 cup Creamy Peanut Butter
1/4 cup Milk
1 In a mixing bowl, cream butter, sugars and peanut butter.
2 Add egg and vanilla; mix well.
3 Combine flour, oats, baking soda and salt; stir into creamed mixture.
4 Spread into a greased 13x9-inch baking pan. Sprinkle with chocolate chips. Bake at 350º for 20-25 minutes or until lightly browned. Middle should be slightly jiggly when removed from oven. Do not over bake.
5 Combine icing ingredients; pour over bars while still hot.
Yield: 3-4 dozen
Cooking Tips
Bars will cut easier if refrigerated for several hours.
Recipe may be doubled and baked in a 15x10 sheet cake pan or jelly roll pan.
