This recipe was a hit with our family. I usually make it and they just can't get enough of this, neither could I. PsychoWard would absolutely be in heaven eating this baby. I use more Velvetta than what this calls for so here it is:

House's Cheesy Heavenly Potatoes

2 to 4 lbs Potatoes
1/2 c melted butter
1 t salt
1/4 t pepper
1/2 c chopped onions (Optional)
1 can Cream of Chicken Soup
1 pt Sour Cream (2 cups = 1 pint)
2 c Diced Velvetta Cheese (You may use actually a half a block of Velvetta if you love even cheesier potatoes like my family does believe me it is worth it.)
2 c or 2 sleeves Crushed Ritz Crackers
1/4 c melted butter

Peel and Cut potatoes. Cook til almost tender. Add 1/2 cup melted butter, salt, pepper, soup, sour cream, and cheese. Blend throughly. Pour into a 5 qt casserole dish. Top with Crushed Ritz Crackers mixed with butter. Bake at 350 degrees for 45 minutes.
