I am a terrific cook and does most of cooking in our home. I have several recipes that I would like to share with you guys:
Ooey Gooey Peanut Butter and Fudge Brownies
Batter:
3 cups sugar
1 cup (2 sticks) butter, softened
½ cup cooking oil
1 tablespoon plus 1-1/2 teaspoons vanilla
6 eggs, room temperature
2-1/4 cups all-purpose flour
1-1/4 cups unsweetened cocoa powder
1-1/2 tsp. Baking power
¾ tsp. Salt
1 bag (10 oz.) peanut butter chips
Filling:
1-1/2 cups creamy peanut butter
1/3 cup cooking oil
½ cup sugar
3 tablespoons all-purpose flour
3 eggs, room temperature
1 tablespoon vanilla
Frosting:
3 bars (1 oz. ea) unsweetened chocolate
3 tablespoons creamy peanut butter
2-2/3 cups powdered sugar
¼ cup water
1 teaspoon vanilla
¼ teaspoon salt
Batter: Preheat oven to 350o. Spray two 13x9x2 inch baking pans with cooking
spray. In a large bowl, beat sugar and butter until creamy. Stir in oil and
vanilla. Add eggs, one at a time, beating well after each addition. In a
small bowl, combine flour, cocoa powder, baking powder, and salt; blend well.
Gradually add flour mixture to creamed mixture, stirring constantly. Fold in
peanut chips. Evenly spread ¼ of the batter into one pan.
Filling: In a small bowl, cream together the peanut butter and the oil. Add
sugar and flour; blend well. Add eggs and vanilla; beat until smooth.
Carefully spread ½ of the filling mixture evenly over the batter in the pan.
Top filling with an additional ¼ of the batter and spread evenly. With a
knife, gently cut through layers to create a marble effect throughout the
brownies. Repeat this process with the remaining pan and remaining batter and
remaining filling. Bake for 30 minutes. Do not over bake.
Frosting: Meanwhile, in a medium saucepan, melt the chocolate and peanut
butter over LOW heat, stirring constantly. Remove from the heat and stir in
remaining ingredients; mix until smooth. If the frosting is too thick, add
additional water 1 tablespoon at a time. Spread frosting over brownies
immediately after baking. Cool in pans on wire racks. Makes 3 dozen brownies.
Preparation time: 40 minutes. Cooking time: 30 minutes
( These were a very big hit for the Super Bowl Party we threw last season when the Steelers won it all!!!)
(This dessert is one of my favorites to make and it is mmmm mmm delicious!!)
REESE'S PEANUT BUTTER CUP CHEESECAKE
Crust:
1 cup oreo cookie crumbs
1 cup Nilla wafer crumbs
4 tablespoon unsalted butter, melted
Mix together and press onto bottom and sides of greased 9-inch
springform pan.
Filling:
4 8-ounce packages cream cheese, softened
3/4 cup sugar
4 eggs
2 tablespoons flour
1/2 cup sour cream
1 teaspoon vanilla
15 Reese's cups, chopped
Preheat oven to 425.
Beat cream cheese and sugar until smooth. Add eggs one at a time,
beating well after each. Add flour, sour cream, and vanilla. Pour
half of
batter in crust-lined pan. Sprinkle ReeseÕs on top. Pour remaining
batter
over top. Bake at 425 for 15 minutes, then reduce heat to 225 and
bake
for an hour.
(This is a very excellent dish for any football game or gathering)
Artichoke and Sun-dried Tomato Pasta
1 (8 ounce) package fresh fettucine (I prefer linguini)
4 tablespoons butter
3 cloves garlic, crushed
1 (8 ounce) package sliced mushrooms
1/2 medium onion, chopped
10 ounces marinated artichoke hearts
2/3 (8 ounce) jar sun-dried tomatoes, packed
in oil
1 (2 ounce) can sliced black olives, drained
1 teaspoon black pepper
1 ripe tomato, chopped
2 tablespoons lemon juice
1 cup dry white wine
1 cup Parmesan cheese
Directions
1 Cook pasta in boiling water until done. Drain.
2 Melt butter over medium heat in a large saucepan. Saute onions,
mushrooms, and garlic until tender. Stir in sun-dried tomatoes,
olives, artichoke hearts, wine, and lemon juice. Bring to a
boil; cook until liquid is reduced by a third, about 4 minutes.
3 Toss pasta with sauce. Top with tomatoes and cheese, add pepper to
taste, and serve.
(This seems to be a favorite among some of my friends when I lived in college, I made this for a study group gathering and was a big hit)
Mexican Mancotti
Serve this hearty entree with spanish rice, homemade salsa and tortilla chips.
1 pound lean ground beef
1 can ( 16 ounces) refried beans
2 1/2 teaspoons chili powder
1 1/2 teaspoons dried oregano
1 package (8 ounces) manicotti shells
2 1/2 cups of water
1 jar ( 16 ounces) picante sauce
2 cups ( 16 ounces) sour cream
1 cup ( 4 ounces) shredded monterey jack or mexican blend cheese
1/4 cup sliced green onions
sliced ripe olives, optional
In a bowl combine the uncooked beef, beans, chili powder, and oregano. Spoon into uncooked manicotti shells; arrange in a greased 13-in.x9-in.x2 in. baking dish. Combine water and picante sauce; pour over shells. Cover and refrigerate overnight.
Next day-
Remove from the refrigerator 30 minutes before baking. Cover and bake at 350 degrees for 1 hour. Uncover; spoon sour cream over the top. Sprinklr with the cheese, onions and olives if desired. Bake 5-10 minutes longer or until the cheese is melted.
Makes 8 servings

This was done at the request of me and atleast one other person that I share recipes with on here. I do not know anything about any other Steelers site, this is the only one I have been to. I can assure you I did not request it to be like anyone else. Just wanted to give everyone the chance to see the recipes that have been swapped, cooked and enjoyed behind the scenes.
