    Scorp's Enchilada Casserole

Chop up some onion...one large head preferrably
Chop up 2 very big bell peppers.....separate what you chop
Grade lots of cheese...whatever satifies your taste buds
Fry up about 1 pound of ground beef or turkey...Add whatever seasoning you like
Open up 1 big can of chopped or olive halves....which ever you prefer

On a baking deep dish cut up corn tortillas and cover bottom
Cover tortillas with a nice layer meat
    Add cheese...lots of cheese
Sprinkle bell peppers, onions and olives
    Another layer of cut tortillas
Throw on rest of the meat
    Add rest of the cheese
Add rest of bell peppers, onions and olives

Your oven should be preheated to about 150-300 degrees
Take out when cheese is beautifully melted and voila.....enjoy
