16 BEAN SOUP
1 pkg 16 dry Bean Soup
□ 2 bay leaves
□ 1/4 teaspoon dried oregano
□ 1/4 teaspoon dried basil
□ 3 stalks celery, stringed and sliced thinly
□ 1/2 lb baby carrots
□ 1 onion, chopped
□ 4 cloves garlic, minced
□ 1 lb Italian sausage
□ 1 tablespoon olive oil
□ 2 cans chicken stock
□ 1 can diced or stewed tomatoes
□ 1/4 teaspoon crushed red pepper
□ salt and pepper, to taste
□ 1 chicken bouillon cube
□ water to cover ingredients
Slice casings of sausage meat and crumble into a skillet. Add olive oil and saute over medium high heat until outside of sausage begins to brown. Add onion and saute until translucent. Add garlic near end. Sausage meat does not need to cook, only brown slightly. Do not allow garlic to brown.
Deglaze pan with chicken stock, and transfer contents of pan to Crockpot.
Add remaining ingredients except for tomatoes to Crockpot.
Set Crockpot to high setting and cook for 2 hours, then cook an additional 3-5 hours on low setting or until beans are tender. Note: Do not allow to boil - choose a setting low enough to keep at a simmer only!
Check occasionally to see if more liquid is required as beans expand during cooking. Add tomatoes during final hour of cooking.
Season with salt and pepper to taste.
Can be served over pasta or rice.
Note: When in season, fresh herbs may be substituted for dried for enhanced flavor.

CROCK POT CHOCOLATE CAKE
1 box chocolate cake mix
8 oz sour cream
1 pkg instant chocolate pudding
1 cup chocolate chips
3/4 cup oil
1 cup water
Mix all ingredients together. Pour into lightly greased 5qt crock pot, metal coffee can or Crock Pot Cake Bake pan. Cover.
Cook 3-4 hours on high or 6-8 hours on low.

CROCK POT SAUERKRAUT
6 strips bacon
1 green pepper
1 lg. bag or can kraut
1 sm. head cabbage
1 1/2 lbs. smoked sausage
2 fresh tomatoes (or 1 can tomatoes)
Brown bacon (cut in squares), chopped onion and chopped green pepper. Fry all together and leave grease in. Dump sauerkraut in crock pot and put above ingredients on top. Add head of cabbage (chopped), sausage (cut in chunks) and the tomatoes (sliced). Cook in crock pot at least 6 hours. (Or, can be cooked in pan on top of stove for 1 hour.)

CROCK POT VEGETABLE SOUP
1 qt. canned tomatoes
1 lb. ground beef
2 lg. potatoes, diced
1 sm. onion, chopped
1 stick butter
Salt and pepper to taste
1 lg. can Veg-All
1 sm. can lima beans
Brown hamburger meat on stove top and place in crock pot. Add tomatoes and all other ingredients. Cook all night long on low.

CROCK POT HAMBURGER CASSEROLE
2 lg. potatoes, sliced
2 or 3 carrots, sliced
1 (No. 2) can peas, drained (save juice)
3 onions, sliced
2 stalks celery
1 1/2 lbs. ground beef, browned
Place all ingredients (in order) in the crock pot. Mix 1 can tomato soup with 1 soup can of liquid (use pea juice). Cover and cook on low for 6 or 8 hours. Stir occasionally.

2 large onions (sliced)
4 lbs pork roast (shoulder or butt)
1 (18 ounce) bottle favorite barbecue sauce
1 cup ginger ale
1. Place one of the onions (sliced) into the crock pot.
2. Place the roast on top and cover with the other sliced onion. Cover everything with ginger ale.
3. Cover and cook on low for twelve hours.
4. Remove the meat, saving the onions and discarding the liquid.
5. With two forks, shred the meat and discard remaining fat, bone or skin.
6 . Return the meat and onions to the crock pot, adding the barbecue sauce. Cook for an additional 4-6 hours on low.

3 to 4 pounds top round or flank steak
1/4 cup flour, + 2 tablespoons
1 teaspoon salt
1/8 teaspoon pepper
1 pound cherry tomatoes, halved
1/2 cup yellow or white onion, sliced
1/4 cup celery, sliced
1 tablespoon steak sauce
1 teaspoon cornstarch
1. Cut steak into 1-inch x 1-inch cubes. Mix ¼ cup of flour, salt, and pepper together. Toss the steak cubes in the flour mixture to coat.
2. Coat bottom of a skillet with olive oil. Heat olive oil on stovetop set to medium heat and brown steak on all sides evenly. Remove from stovetop, drain and place in stoneware in slow cooker heating base.
3. Add tomatoes onion, celery, and steak sauce. Cover and cook on Low for 6-8 hours or on High for 3-4 hours.
4. To thicken sauce, mix 2 tablespoons flour with 1/8 cup of water, then add to stoneware and mix well to thicken, and cook for and additional 15 minutes.

1 (6 ounce) package pepperoni
1 bunch fresh green onion, thinly sliced
1/2 sweet red bell pepper, finely chopped
1 medium tomato, finely chopped
1 (14 ounce) jar pizza sauce
1 (12 ounce) package shredded mozzarella cheese
1 (8 ounce) package cream cheese, cubed
Chop pepperoni into very small pieces and place in small slow cooker.
Add green onion, bell pepper, tomato and pizza sauce and stir well.
Cover and cook on LOW for 2 1/2 to 3 1/2 hours.
Stir in mozzarella and cream cheese until both cheese melt.
