Here is good way to make use of your left over cooker of Pinto Beans.

Ingredients:
2-4 cups of mashed pinto beans
1 small finely diced Onion
Salt and Pepper to taste
1/2 cup flour
Before you mash the beans remove all but about a cup of the soup from the beans,mix all ingredients together.The mixture should be somewhat thick but still be able to easily drop from a tablespoon.Heat a cast iron skillet and put enough oil in to cover the bottom.When oil is hot enough drop the mixture by tablespoons full till you have filled the pan,leaving space between each one .Fry on each side for about 3-5 minutes,pat them down after first flip,fry until golden brown..they should hold together like a hamburger patty.You could also fix these on a griddle.


These have been made in the south for as long as I can remember.
They are great with fried potatoes and crispy bacon or pork chops.Enjoy
