I love venison fixed every way possible,and my stew is similar to this thanks for sharing...sometimes Deer meat will have a strong gamey taste and I think that depends on age of deer and how its cleaned and what it eats...but if its really strong..I soak it in garlic salt water overnite and it works for me...my neighbor has a freezer full of venison right now cause his daughters freezer broke down..so I must go visit Poppie and raid the freezer...
You could also try soaking your roast in vinigar water.. my son hunts alot and he dont like the gamie taste of deer meat.. he uses 1 cup of white vinigar to a sink full of cold water..

The gamey taste is totaly related to processing, specifically at the time of kill. If the deer is not gutted and, more importantly, skinned before it is processed, it will have a more gamey flavor. Of course, imho, that's the best part of deer meat, the unique flavor.
My brother-in-law hunts on orchard land with corn fields around it. The deer meat tastes incredible. My friend hunts in the mountains where the diet is considerably different. His deer has a decidedly more gamey taste. I usually use the meat from my brother-in-law's deer when the deer is served alone (steaks, burgers, etc.) and the deer from my friend when I am making stews, spaghetti sauces, etc. I also like to soak the meat in a vinegar/water solution, or marinate it. Actually, come to think of it, I guess I eat it any way I can get it.......
