Cheesy Broccoli rice casserole
Okay, here is the one I make with rice that pyscho loves because of the cheese....I think I might add chicken the next time I make it....:dunno:
20 oz. chopped broccoli
Velvetta cheese
2 cans mushroom soup
2 cups minute rice
1 stick margarine
2 stalks celery chopped
1 small onion chopped
½ can milk
½ can water
Cook broccoli as directed and drain. Saute onion and celery in margarine. Mix broccoli, rice, celery, onion and mushroom soup together. Add ½ can of milk and ½ can of water to the mixture. Layer cheese on top of casserole and cover. Bake at 350 degrees for 30 minutes. Remove and mix cheese in, re-layer and bake for additional 20 minutes uncovered or until cheese starts to brown
