1 Med onion, minced
1 Clove minced garlic
2 tbsp Butter
1 can chopped green chilies
1 lb velveeta cheese
1 5.33 can evaporated milk

Saute onion and garlic in butter in large heavy saucepan. Add chilies and cook for 3 minutes. Add cheese and milk. Stir constantly until cheese melts. Serve warm with tortilla chips.

I've eat this in a few truck stops and it's killer :stirpot: Minus the velvetta cheese,i think they used cheddar :dunno:

I think they recommend the velveeta just because it melts easier with the cheddar. you might have to add a little more milk with the cheddar to help smooth it out.....hmmmmm.....might have to try that..... If any of you try it first let me know how it works.
