I got thinking about the defense and wondered if anyone knows if a defense ever finished ranked #1 overall in the NFL and the team didn't make the post season.

Found my answer...the 2010 San Diego Chargers had the #1 overall defense and missed the playoffs. On top of that they had the #1 overall offense that year as well.
