Yeah SG, what's the matter with you!!

I haven't made them this year yet but I will at some point soon. Smokies wrapped in bacon and dipped in BBQ sauce.

I think the recipe is in this section somewhere but all you do is take the lil smokies, wrap them in bacon slices and stick a tooth pick thru them to hold it all together, and put them in a crock pot on high. They'll cook over the next hour and the bacon will get nice and perfectly cooked.

Yeah it's just nachos but you put the pulled pork bbq on top and then melted cheese on top of that. Dip the nachos just like you would with salsa or anything else.

what you need
1pkg. refrigerated sliceable sugar cookies, sliced (my recipe called for 1 but I used 1 1/2)
1pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4cup sugar
1/2tsp. vanilla
you can use any fruit...I cut up strawberries, grapes and used mandarine oranges

HEAT oven to 375F.
LINE 12-inch pizza pan spray with cooking spray. Arrange cookie dough slices in single layer in prepared pan; press together to form crust. Bake 14 min.; cool completely.
BEAT cream cheese, sugar and vanilla with mixer until well blended. Spread over crust.
TOP with fruit Refrigerate 2 hours.

I actually made my cookie the night before....here is a pic of mine...

Avocado Mashed Potatoes

This is an interesting twist on mashed potatoes. The avocados add a buttery, creamy texture with a fraction of the calories and saturated fat of butter and cream!
This is an interesting twist on mashed potatoes. The avocados add a buttery, creamy texture with a fraction of the calories and saturated fat of butter and cream!

Number of Servings: 4

Ingredients
2 medium avocados

1 and 1/2 lb new potatoes
(or yukon golds - whatever you have around)

1 T Smart Balance Light

1/2 cup nonfat milk

1 dash lemon juice

salt, pepper, and garlic powder to taste

Peel and quarter the potatoes, then wash them thoroughly.

Place the potatoes in a large pot with enough cold, salted water to cover them.

Meanwhile, prepare the avocados, making sure to remove any brown flesh. Scoop into a bowl and stir until smooth with lemon juice.

Place the tablespoon of Smart Balance and milk in the microwave until melted and warm.

When potatoes are fork tender, mash them in a large bowl or a stand mixer, slowly adding the milk and butter spread mixture.

When potatoes are mashed to your liking, gently fold in avocado mixture gently, or in a stand mixer - use the lowest setting.

Keep warm and serve!

(hint: Using a small crockpot is a great way to keep potatoes creamy and warm while waiting to serve.)
